Blend until completely smooth and creamy. Scrape down the sides as needed to ensure even mixing.
Taste and adjust sweetness or spice level as desired. Add more maple syrup for sweetness or more Tagine spice blend for a warmer flavor.
Spoon the mousse into individual serving dishes or glasses.
Refrigerate for at least 30 minutes to allow the mousse to firm up slightly (optional, but recommended).
Before serving, sprinkle the chopped pistachios on top of each mousse.
