Preheat oven to 375°F (190°C).
In a large bowl, combine the sliced apples, 2 tbsp melted butter, 1/4 cup brown sugar, lemon juice, cinnamon, ginger, turmeric, cumin, and saffron threads (if using). Toss gently to coat evenly. You can also cook apples mixture in a saucepan for a couple of minutes for softer results.
Pour the apple mixture into a 9-inch baking dish.
In a separate bowl, combine the almonds, flour, oats, and 1/2 cup brown sugar.
Add the cold, cubed butter to the dry ingredients. Use your fingers or a pastry blender to cut the butter into the mixture until it resembles coarse crumbs.
Sprinkle the almond crumble topping evenly over the apple mixture.
Bake for 30-35 minutes, or until the topping is golden brown and the apple filling is bubbling.
Let cool slightly before serving. Serve warm with vanilla ice cream or whipped cream.

Add a handful of chopped dates or raisins to the apple filling for extra sweetness and texture.

Adjust the spices to your liking. If you prefer a spicier crumble, add a pinch of cayenne pepper.
