In a separate bowl, gently toss the sliced Jersey strawberries with the vanilla extract (if using).
To assemble the parfaits, layer the strawberry mixture, granola, and clotted cream in each serving glass. Repeat the layers until the glasses are filled. Start with strawberries as the base layer.
Dust the top of each parfait with a light sprinkling of icing sugar (optional).
