A hearty and wholesome breakfast bar bursting with the flavors of Jersey apples and blackberries, featuring local ingredients like Jersey Royal potatoes and creamy Jersey milk.
Preheat oven to 375°F (190°C). Grease a 9x13 inch baking pan.
In a large bowl, combine the mashed Jersey Royal potatoes, rolled oats, flour, brown sugar, baking powder, cinnamon, and salt.
Add the melted Jersey butter, Jersey milk, and vanilla extract to the dry ingredients. Mix until just combined. Do not overmix.
In a saucepan, combine the diced Jersey apples, blackberries and lemon juice. Cook over medium heat for 5 minutes to soften the apples slightly and release the blackberry juices. Remove from heat.
Press half of the oat mixture into the prepared baking pan to form the base.
Spread the apple and blackberry mixture evenly over the oat base.
Crumble the remaining oat mixture over the fruit filling.
Bake for 30-35 minutes, or until the top is golden brown and the fruit filling is bubbly.
Let cool completely in the pan before cutting into bars.
