**Prepare the Potato Granola:** Preheat oven to 175°C (350°F).
In a bowl, combine the diced Jersey Royal potatoes, rolled oats, chopped almonds, melted Jersey butter, honey, brown sugar, cinnamon, vanilla extract and salt.
Spread the mixture evenly on a baking sheet lined with parchment paper.
Bake for 20-25 minutes, or until golden brown and crispy, stirring halfway through to ensure even baking. Let cool completely.
**Assemble the Parfaits:** In each glass jar or dessert cup, layer the ingredients in the following order: a spoonful of Jersey clotted cream, a layer of mixed fresh berries, a sprinkle of potato granola.
Repeat the layers until the glasses are filled, finishing with a generous dollop of clotted cream and a final sprinkling of granola and berries.
Serve immediately or chill for later enjoyment.

For a richer flavor, toast the chopped almonds in a dry pan for a few minutes before adding them to the granola mixture.
If you can't find Jersey Royal potatoes, use another type of small, waxy potato. Ensure you dice them small for best results.
Adjust the sweetness of the granola to your preference by adding more or less honey or brown sugar.
Feel free to add other local Jersey ingredients like blackberries or gooseberries to the berry mixture.
For a vegan version substitute the clotted cream for a vegan cashew cream and use maple syrup or agave instead of honey.
