Preheat oven to 180°C (350°F).
If desired, lightly brush the croissants with melted Jersey butter.
Warm the croissants in the preheated oven for 3-5 minutes until slightly crisp.
Carefully slice each croissant horizontally, without cutting all the way through.
Generously spread Jersey clotted cream on the bottom half of each croissant.
Spoon sweet fig jam on top of the clotted cream.
Close the croissants and serve immediately.
Optional: dust with icing sugar for presentation.

If you can't find local Jersey figs, use high-quality dried figs to make your own jam. Soak the dried figs in warm water before cooking them with sugar and lemon juice.
