Heat vegetable oil in a wok or large frying pan over medium-high heat.
Add the garlic and ginger and stir-fry for about 30 seconds until fragrant.
Add the shredded Jersey cabbage and stir-fry for 5 minutes, until slightly softened.
Add the sliced apples and continue to stir-fry for another 5 minutes, until the apples are tender-crisp.
In a small bowl, whisk together the soy sauce and honey (or maple syrup/agave).
Pour the soy sauce mixture over the cabbage and apples and stir-fry for 2 minutes, until the sauce is thickened and evenly coats the vegetables and fruit.
Stir in sesame oil, then remove from heat.
Garnish with sesame seeds and sliced spring onions. Serve immediately.
