
A quick, flavorful, and healthy stir-fry featuring crisp lettuce and protein-packed tofu. Perfect for a light and satisfying lunch.
Press the tofu for at least 15 minutes to remove excess water. Cut the tofu into small cubes.
In a small bowl, combine soy sauce, sesame oil, and cornstarch (if using). Add water if using cornstarch and whisk until smooth.
Heat vegetable oil in a wok or large skillet over medium-high heat. Add tofu and stir-fry until lightly golden brown, about 5-7 minutes. Remove tofu from the wok and set aside.
Add minced garlic and ginger to the wok and stir-fry for about 30 seconds, until fragrant. Be careful not to burn the garlic.
Roughly chop the lettuce into large pieces. Add the lettuce to the wok and stir-fry for 1-2 minutes, until slightly wilted but still crisp.
Pour the soy sauce mixture over the lettuce and stir to coat. Add red pepper flakes if using.
Return the tofu to the wok and stir to combine. Cook for another minute until heated through.
Garnish with sliced green onions before serving. Serve immediately.
