Prepare the tofu: Cut the pressed tofu into small cubes. Heat 1 tablespoon of sesame oil in a wok or large skillet over medium-high heat. Add the tofu and cook until golden brown and crispy on all sides, about 8-10 minutes. Remove from the skillet and set aside.
Cook the noodles: Cook the noodles according to package directions. Drain and set aside.
Stir-fry the vegetables: Add the remaining 1 tablespoon of sesame oil to the skillet. Add the broccoli florets, carrots, and red bell pepper. Stir-fry for 5-7 minutes, until slightly softened.
Make the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, honey (or maple syrup), grated ginger, and minced garlic. Add the white parts of the green onions. Add red pepper flakes, if using.
Combine everything: Pour the sauce over the vegetables in the skillet. Bring to a simmer and cook for 1-2 minutes, until the sauce thickens slightly. If the sauce becomes too thick, add a splash of vegetable broth.
Add tofu and noodles: Add the cooked tofu and noodles to the skillet. Toss to coat everything in the sauce.
Serve: Garnish with the green parts of the green onions and sesame seeds. Serve immediately.
