Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
Shape the dough into 1-inch balls and place them on the prepared baking sheet.
Lightly brush the top of each cookie with egg white and sprinkle with sliced almonds (if using).
Bake for 12-15 minutes, or until the edges are lightly golden brown.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
