Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
If using goat cheese, stuff each date with a small amount (about 1/4 teaspoon).
Wrap each date with a half-slice of bacon, overlapping the ends to secure. You can use a toothpick to hold it in place but they are usually not needed.
Place the wrapped dates on the prepared baking sheet, ensuring they are not overcrowded.
Bake for 15-20 minutes, or until the bacon is crispy and golden brown. Flip the dates halfway through to ensure even cooking.
Remove from the oven and let cool slightly before serving. Carefully remove toothpicks if used.
Garnish with fresh rosemary and a sprinkle of black pepper, if desired.
