Preheat oven to 375°F (190°C).
Butter one side of each slice of bread.
Spread Dijon mustard on the unbuttered side of four slices of bread.
Top each mustard-covered slice with a layer of ham and then a layer of Gruyère cheese.
Place the remaining slices of bread on top, butter-side up, to form sandwiches.
Heat a griddle or large pan over medium heat. Alternatively, you can bake the sandwiches without this step for a slightly different texture.
Grill the sandwiches for 2-3 minutes per side, until golden brown and the cheese is melted. (Skip if baking)
Place the sandwiches on a baking sheet and bake for 5-7 minutes, or until the cheese is bubbly and golden brown.
While the sandwiches are baking, prepare the green salad. In a bowl, combine mixed greens, cherry tomatoes, and cucumber.
In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
Dress the salad with the vinaigrette.
Serve the Croque Monsieur hot with the green salad.

For a richer Croque Monsieur, add a béchamel sauce (white sauce) over the top before baking.
Use different types of cheese, such as Emmental or Comté, for a variation in flavor.
If you don't have a griddle, you can also toast the sandwiches in a panini press or skillet.
Add a fried egg on top of the Croque Monsieur for a Croque Madame.
