Preheat oven to 375°F (190°C).
Spread butter on one side of each slice of bread.
Spread Dijon mustard on the unbuttered side of four slices of bread.
Top the mustard-covered slices with ham and Gruyère cheese.
Top with the remaining slices of bread, butter-side up.
Place the sandwiches on a baking sheet and bake for 10-15 minutes, or until golden brown and the cheese is melted and bubbly.
While the sandwiches are baking, prepare the salad dressing. In a large bowl, whisk together olive oil, red wine vinegar, minced shallot, parsley, salt, and pepper.
Add the mixed greens to the bowl with the dressing and toss to coat.
Serve the Croque Monsieur sandwiches immediately with the Salade Verte on the side.

Add a fried egg on top of the Croque Monsieur for a Croque Madame.
You can use other cheeses like Emmental or Comté instead of Gruyère.
