
Delicious and fragrant German Lebkuchen cookies, packed with ground almonds, candied citrus peel, and warming spices, dipped in dark chocolate.
Preheat oven to 175°C (350°F). Grease baking sheets or line with parchment paper.
In a large bowl, combine the flour, ground almonds, brown sugar, Lebkuchen spice mix, and baking soda.
In a separate saucepan, gently warm the honey until liquid. Let it cool slightly.
Add the slightly cooled honey, egg, chopped candied orange peel, and chopped candied lemon peel to the dry ingredients. Mix well to form a smooth dough.
Roll out the dough to about 1/2 cm (1/4 inch) thickness on a lightly floured surface. Use cookie cutters to cut out desired shapes, or simply cut into squares or rectangles.
Place the Lebkuchen cookies onto the prepared baking sheets, leaving some space between them.
Bake for 15-20 minutes, or until lightly golden brown. The baking time depends on the size of the cookies. Do not overbake, or they will become dry.
Let the cookies cool completely on the baking sheets before dipping in chocolate.
While the cookies are cooling, melt the dark chocolate in a double boiler or heatproof bowl set over a pan of simmering water. Stir frequently until smooth. Optionally, stir in 1 tbsp of milk or cream to thin out the chocolate for easier dipping.
Dip each Lebkuchen cookie halfway or fully into the melted chocolate. Place the dipped cookies on parchment paper to set.
Let the chocolate set completely before serving. This can be sped up by placing them in the refrigerator for a short time.

Store the Lebkuchen in an airtight container for up to 2 weeks. The flavor improves over time.
Adjust the amount of spices to your preference. If you don't have a Lebkuchen spice mix, use a combination of cinnamon, cloves, nutmeg, allspice, and ginger.
For a softer Lebkuchen, add a tablespoon of applesauce to the dough.
If the dough is too sticky to roll out, chill it in the refrigerator for 30 minutes before rolling.
You can decorate the chocolate-dipped Lebkuchen with chopped nuts, sprinkles, or candied citrus peel before the chocolate sets.
