
A comforting and flavorful meatloaf recipe served with simple roasted potatoes and green beans. A true American classic!
Preheat oven to 350°F (175°C).
In a large bowl, combine ground beef, breadcrumbs, egg, diced onion, 1/4 cup ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix gently but thoroughly with your hands.
Shape the meat mixture into a loaf. Place in a meatloaf pan or on a baking sheet lined with parchment paper.
Spread the remaining 1/4 cup of ketchup over the top of the meatloaf.
In a separate bowl, toss the cut potatoes with 1 tablespoon olive oil, paprika, salt, and pepper. Spread on a baking sheet.
Roast the potatoes and meatloaf in the preheated oven for 45 minutes.
While the meatloaf and potatoes are roasting, toss the green beans with the remaining 1 tablespoon olive oil, salt, and pepper.
After 45 minutes, add the green beans to the baking sheet with the potatoes. Bake for another 5 minutes, or until the meatloaf is cooked through (internal temperature of 160°F/71°C) and the potatoes and green beans are tender.
Let the meatloaf rest for 5-10 minutes before slicing and serving. Serve with the roasted potatoes and green beans.

For a moister meatloaf, add a grated carrot or zucchini to the meat mixture.
If you don't have a meatloaf pan, you can form the loaf on a baking sheet and create a shallow trench around it to catch any drippings.
Don't overmix the meat mixture, as this can result in a tough meatloaf.
Adjust the cooking time based on the size and thickness of your meatloaf.
