Classic fortune cookies elevated with a sweet white chocolate coating and a refreshing peppermint crunch. Perfect for the holidays or any time you want a touch of festive cheer.
Prepare your workspace: Line a baking sheet with parchment paper.
Crush the peppermint candies: Place the peppermint candies in a resealable bag and crush them using a rolling pin or meat mallet until finely crushed. Set aside.
Melt the white chocolate: Place the white chocolate chips and coconut oil (if using) in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until completely melted and smooth. Alternatively, melt the chocolate using a double boiler.
Dip the fortune cookies: Dip each fortune cookie halfway or completely into the melted white chocolate, allowing any excess to drip off.
Sprinkle with peppermint: Immediately sprinkle the dipped portion of the cookie with the crushed peppermint candies.
Set and Harden: Place the dipped and sprinkled fortune cookies on the prepared baking sheet.
Chill (optional): Refrigerate the cookies for 10-15 minutes to allow the chocolate to set completely. This step is optional but helps prevent the chocolate from melting at room temperature.

Work quickly when dipping the cookies, as the white chocolate will start to harden.
If the white chocolate starts to thicken, microwave it again in short intervals until smooth.
For a more intense peppermint flavor, add a few drops of peppermint extract to the melted white chocolate (start with 1/8 teaspoon and adjust to taste).
Store the dipped fortune cookies in an airtight container at room temperature or in the refrigerator for up to a week.
