
A quick and easy Thermomix recipe for succulent chicken breasts simmered in a rich tomato and herb sauce, inspired by the classic Italian Pizzaiola style.
Place onion and garlic into the Thermomix bowl and chop 5 sec/speed 5. Scrape down the sides of the bowl.
Add olive oil to the bowl and sauté 3 min/120°C/speed 1.
Add chopped tomatoes, tomato paste, oregano, basil, red pepper flakes (if using), chicken broth/water, salt, and pepper to the bowl. Cook 10 min/100°C/speed 1.
While the sauce is cooking, season chicken breasts with salt and pepper.
After the sauce has cooked for 10 minutes, place the chicken breasts into the Thermomix Varoma dish and set aside.
Place Varoma dish on top of the Thermomix. Cook 15 min/Varoma/speed 1, or until chicken is cooked through (internal temperature reaches 74°C/165°F).
Check the chicken for doneness. If needed, cook for a few more minutes.
Carefully remove the Varoma dish with the chicken. Place the chicken breasts on plates.
Pour the tomato sauce over the chicken breasts. Garnish with fresh parsley and Parmesan cheese (if using).
Serve immediately with pasta, rice, or crusty bread.

For a thicker sauce, you can blend the sauce for a few seconds at speed 7 after cooking.
Add olives, capers, or mushrooms to the sauce for extra flavor.
If you don't have chicken broth, water works just fine.
Adjust the amount of red pepper flakes to your spice preference.
To make this recipe even quicker, you can use pre-chopped onions and garlic.
Ensure chicken breasts are of similar thickness to ensure even cooking.
