In a saucepan, bring the water or almond milk, tagine spice blend, and a pinch of salt to a boil.
Stir in the couscous, reduce heat to low, cover, and simmer for 5-7 minutes, or until the liquid is absorbed and the couscous is tender. Follow package instructions for exact cooking time.
Remove from heat and fluff the couscous with a fork.
Stir in the dried apricots, raisins, almonds, walnuts, honey or maple syrup, and orange zest (if using).
Divide the couscous among bowls and serve warm.
