
A simple and flavorful baked feta pasta with fresh spinach, juicy tomatoes, and aromatic garlic.
Preheat oven to 400°F (200°C).
In a large baking dish, combine cherry tomatoes, spinach, minced garlic, olive oil, dried oregano, red pepper flakes (if using), salt, and pepper.
Place the block of feta cheese in the center of the baking dish, nestled among the tomatoes and spinach.
Bake for 30-35 minutes, or until the tomatoes are softened and the feta is golden brown on top.
While the feta and tomatoes are baking, cook the pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
Once the feta and tomatoes are done, remove the baking dish from the oven. Mash the feta cheese and tomatoes together with a fork until a creamy sauce forms.
Add the cooked pasta to the baking dish and toss to coat with the sauce. Add reserved pasta water, a little at a time, until the sauce reaches your desired consistency.
Serve immediately and enjoy!
