
A healthy and flavorful frittata packed with spinach, purple sprouting broccoli, and feta cheese. Perfect for breakfast, brunch, or a light dinner.
Preheat oven to 375°F (190°C).
Heat olive oil in an oven-safe skillet over medium heat. Add garlic and cook for 1 minute, until fragrant.
Add the purple sprouting broccoli to the skillet and cook for 5-7 minutes, or until slightly tender. Season with salt and pepper.
Add the spinach to the skillet and cook until wilted, about 2 minutes.
In a large bowl, whisk together the eggs and milk. Season with salt and pepper.
Pour the egg mixture over the vegetables in the skillet. Stir gently to combine.
Sprinkle the feta cheese evenly over the top of the frittata.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden brown.
Let the frittata cool for a few minutes before slicing and serving.
