Preheat oven to 375°F (190°C).
Pour the Jersey milk into an oven-safe dish. Ensure the dish is not too large, as the milk should form a layer about 1 inch thick.
Stir in the salt and pepper.
Place the thyme sprigs on top of the milk, evenly spaced.
Bake in the preheated oven for 20-25 minutes, or until the milk has set around the edges and developed a golden-brown crust. The center should still jiggle slightly.
Remove from the oven and let cool slightly (about 5-10 minutes).
Drizzle honey evenly over the roasted milk.
Cut into squares and serve warm or at room temperature. Garnish with additional fresh thyme sprigs if desired.
