Preheat oven to 400°F (200°C).
Cut the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap in foil, and bake for 30 minutes, or until cloves are soft and fragrant.
Let the garlic cool slightly. Squeeze the roasted garlic cloves out of their skins into the bowl of a food processor.
Add the chickpeas, tahini, lemon juice, 2 tablespoons of olive oil, cumin, and salt to the food processor. Process until smooth and creamy.
With the food processor running, gradually add ice water, 1 tablespoon at a time, until the hummus reaches your desired consistency.
Taste and adjust seasoning as needed.
Transfer the hummus to a serving bowl. Drizzle generously with olive oil and sprinkle with za'atar.
Serve immediately with warm pita bread.
