
A comforting and flavorful noodle soup featuring tender pork and shrimp wontons, fresh bok choy, and a savory broth.
In a bowl, combine ground pork, chopped shrimp, soy sauce, sesame oil, grated ginger, chopped green onion, beaten egg, cornstarch, salt and white pepper. Mix well.
To assemble the wontons, lay a wonton wrapper flat. Place about 1 teaspoon of filling in the center. Wet the edges of the wrapper with water. Fold the wrapper in half diagonally to form a triangle, pressing out any air and sealing the edges. Bring the two bottom corners of the triangle together in front and press to seal. Repeat until all filling is used.
Bring chicken broth to a boil in a large pot.
Gently add the wontons to the boiling broth. Cook for about 3-5 minutes, or until they float to the surface and are cooked through.
Add the noodles and cook according to package directions.
Add the chopped bok choy and cook for another 2-3 minutes, until tender-crisp.
Season with salt and white pepper to taste.
Serve hot, garnished with extra green onions, if desired.

For a spicier soup, add a pinch of red pepper flakes to the wonton filling or a drizzle of chili oil to the finished soup.
Wontons can be made ahead of time and frozen. Freeze them on a baking sheet lined with parchment paper until solid, then transfer them to a freezer bag.
Adjust the amount of bok choy to your preference.
You can also add other vegetables like mushrooms or carrots to the soup.
