In a large bowl, combine ground lamb, chopped onion, minced garlic, parsley, cumin, coriander, ginger, paprika, cayenne pepper, salt, and pepper. Gently mix until just combined. Do not overmix.
Form the mixture into four equal-sized patties, about ¾ inch thick. Make a slight indentation in the center of each patty to prevent them from bulging during cooking.
Preheat your grill or grill pan to medium-high heat. Brush the grates with olive oil.
Grill the burgers for 5-7 minutes per side, or until cooked through and the internal temperature reaches 160°F (71°C).
While the burgers are grilling, prepare the mint yogurt sauce: In a small bowl, combine Greek yogurt, chopped mint, and lemon juice. Mix well and set aside.
Toast the burger buns.
Assemble the burgers: Place a grilled lamb patty on each toasted bun. Top with a generous dollop of mint yogurt sauce. Serve immediately with your favorite sides.

If you don't have a grill, you can pan-fry the burgers in a skillet over medium-high heat.
