In a medium bowl, combine the chicken cubes and Korean BBQ sauce. Mix well to ensure all chicken pieces are coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
While the chicken is marinating, prepare the peanut satay sauce. In a small saucepan, combine peanut butter, soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, and red pepper flakes (if using).
Heat the sauce over medium-low heat, stirring constantly, until smooth and heated through. If the sauce is too thick, add water, one tablespoon at a time, until it reaches your desired consistency. Remove from heat and set aside.
Preheat your grill to medium heat.
Thread the marinated chicken onto the soaked wooden skewers, leaving a small space between each piece.
Grill the chicken skewers for 6-8 minutes per side, or until the chicken is cooked through and has a slight char. Ensure the internal temperature reaches 165°F (74°C).
Remove the skewers from the grill and let them rest for a few minutes.
Garnish with chopped green onions and sesame seeds.
