Pour the lemon-garlic herb butter mixture over the potatoes in the roasting pan.
Toss the potatoes well to ensure they are evenly coated.
Arrange the potatoes in a single layer in the roasting pan.
Roast for 25-30 minutes, or until the potatoes are tender and golden brown, turning them halfway through.
Squeeze the juice of the lemon over the roasted potatoes.
Serve hot, garnished with fresh herbs and local seasonal greens (optional).
