Preheat your oven to 220°C (425°F). Place a baking sheet in the oven while it preheats.
While oven preheats, melt Jersey butter.
Roll out or stretch the pizza dough into a large, thin oval or circle on a lightly floured surface.
Brush the pizza dough with the melted Jersey butter.
In a small bowl, combine the Jersey olive oil, minced garlic, chopped rosemary, salt, and pepper.
Brush the garlic-rosemary oil mixture evenly over the buttered pizza dough.
Arrange the thinly sliced Jersey Royal potatoes in a single layer over the oiled dough, overlapping slightly.
Carefully transfer the pizza dough onto the preheated baking sheet.
Bake for 20-25 minutes, or until the crust is golden brown and the potatoes are tender and slightly crispy.
Remove from the oven and sprinkle with extra flaky sea salt.
Garnish with fresh chives (if using).
Slice and serve immediately.

For extra flavor, toss the potato slices in a little of the garlic-rosemary oil before arranging them on the pizza.
If you want a crispier crust, pre-bake the dough for a few minutes before adding the toppings.
Experiment with other local Jersey seasonal vegetables, such as asparagus or samphire, for a different twist.
A sprinkle of grated Jersey cheese can be added for a richer flavour.
