Cover the bowl (or divide into individual jars) and refrigerate overnight, or for at least 4 hours.
Before serving, toast the pecans in a small dry skillet over medium heat for 3-5 minutes, or until fragrant and lightly browned, stirring frequently. Watch carefully to avoid burning.
If desired, stir in Jersey honey to the overnight oats for added sweetness to taste.
Top the overnight oats with the toasted pecans and serve cold.
