Gradually whisk in the milk, a little at a time, ensuring there are no lumps. Continue stirring until the sauce thickens.
Remove the saucepan from the heat and stir in the grated cheddar cheese until melted and smooth.
Add the grated Jersey apple, diced smoked ham, Dijon mustard, Worcestershire sauce, and cayenne pepper (if using). Season with salt and black pepper to taste. Mix well.
