Simple and flavorful grilled Jersey Royal potatoes, enhanced with the fresh aroma of rosemary and garlic, showcasing the best of Jersey's local produce.
Preheat your grill to medium-high heat. If using a charcoal grill, make sure the coals are glowing red and covered with a layer of gray ash.
While the grill is heating, prepare the potatoes. In a large bowl, combine the scrubbed Jersey Royal potatoes, melted Jersey butter, Jersey milk, minced garlic, chopped rosemary, olive oil, salt, and pepper. Toss well to coat the potatoes evenly.
Place the potatoes in a single layer on the preheated grill. You may need to use a grill basket or foil tray with holes to prevent them from falling through the grates, especially if they are smaller. Alternatively, you can thread them onto skewers.
Grill the potatoes for about 25-30 minutes, turning occasionally, until they are tender and slightly charred. Check for doneness by piercing with a fork – they should be easily pierced.
Remove the potatoes from the grill and transfer them to a serving dish.
Garnish with freshly chopped rosemary and serve immediately. Optionally, serve alongside lightly dressed local seasonal greens.

For extra flavor, add a squeeze of lemon juice after grilling.
If you don't have a grill, you can roast the potatoes in the oven at 200°C (400°F) for about 30-40 minutes.
Pre-boiling the potatoes for 5 minutes before grilling can help them cook more evenly and faster.
Use a pastry brush to baste the potatoes with the butter and milk mixture while grilling for extra flavour and moisture.
