**Make the Quarkkeulchen Dough:** In a large bowl, combine the quark cheese, mashed potatoes, flour, egg, sugar, vanilla extract, and lemon zest. Mix until just combined. Do not overmix.
**Form the Dumplings:** Lightly flour a work surface. Take a spoonful of the dough and gently shape it into a round or oval dumpling, about 2-3 inches in size. The dough will be sticky, so keep your hands and the work surface lightly floured.
