Prepare the apples: Peel, core, and slice the apples into 1/4-inch thick rounds.
Make the batter: In a large bowl, whisk together the flour, baking powder, salt, and 1 tablespoon sugar.
In a separate bowl, whisk together the egg, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix; a few lumps are okay.
Heat the oil: Heat the vegetable oil in a deep frying pan or pot over medium-high heat to 350°F (175°C).
Prepare the cinnamon sugar: In a small bowl, combine the 2 tablespoons sugar and cinnamon.
Dip and fry: Dip each apple slice into the batter, making sure it's fully coated. Carefully place the battered apple slices into the hot oil, working in batches to avoid overcrowding the pan.
Fry until golden brown: Fry the apple fritters for 2-3 minutes per side, or until golden brown and cooked through.
Drain and coat: Remove the fritters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. While still warm, sprinkle generously with the cinnamon sugar.
Serve immediately: Serve the Apfelküchle warm.

Don't overcrowd the pan when frying. This will lower the oil temperature and result in greasy fritters.
