Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
In a large skillet over medium heat, add the olive oil. Add the sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Add the minced garlic to the skillet and cook for about 1 minute, until fragrant. Be careful not to burn the garlic.
In a large bowl, whisk together the eggs, milk, heavy cream (if using), oregano, salt, and pepper.
Add the bread cubes to the egg mixture and toss to coat well. Let it sit for 5-10 minutes to allow the bread to absorb the liquid.
Stir in the cooked sausage and garlic mixture, 1/2 cup of the Parmesan cheese, and 1 cup of the mozzarella cheese into the bread and egg mixture.
Pour the mixture into the prepared baking dish. Sprinkle the remaining mozzarella and Parmesan cheese over the top.
Bake for 35-40 minutes, or until the strata is golden brown and set. A knife inserted into the center should come out clean.
Let the strata cool for a few minutes before slicing and serving. Garnish with fresh parsley, if desired.
