**Prepare the Aloo Tikki:** Boil potatoes until tender. Peel and mash them well in a large bowl.
Add peas, chopped onion, grated ginger, chopped green chili (if using), chopped cilantro, turmeric powder, garam masala, cumin powder, amchur (if using), and salt to the mashed potatoes.
Mix all ingredients thoroughly. Add breadcrumbs and mix again to bind the mixture.
Shape the mixture into 4 equal-sized patties.
**Cook the Aloo Tikki:** Heat oil in a frying pan or on a griddle over medium heat.
Carefully place the patties in the hot oil and cook for 5-7 minutes per side, or until golden brown and crispy.
**Prepare the Raita:** In a small bowl, combine yogurt, grated cucumber, chopped cilantro, and a pinch of salt. Mix well and refrigerate until serving.
**Prepare the Mint Chutney:** In a blender or food processor, combine mint, cilantro, green chili, ginger, garlic, lemon juice, and salt. Add a little water as needed to help blend to a smooth paste. Adjust seasonings to taste.
**Assemble the Burgers:** Lightly toast the burger buns.
Spread mint chutney on the bottom bun.
Place an Aloo Tikki patty on top of the chutney.
Spoon raita over the patty.
Cover with the top bun and serve immediately.
