Heat the vegetable oil in a large skillet or frying pan over medium heat.
Form the lentil mixture into small, flattened patties (about 2 inches in diameter).
Carefully place the fritters in the hot oil, being careful not to overcrowd the pan.
Fry for 3-4 minutes per side, or until golden brown and crispy.
Remove the fritters from the pan and place them on a plate lined with paper towels to drain excess oil.
While the fritters are frying, prepare the yogurt dipping sauce: In a small bowl, combine the plain yogurt, lemon juice, and chopped cilantro. Mix well.
Serve the hot lentil and injera fritters immediately with the yogurt dipping sauce.
