Thinly sliced pork marinated in a flavorful and spicy gochujang sauce, stir-fried with colorful vegetables, and served over a bed of delicious sesame noodles. A quick and easy Korean-inspired dinner!
**Marinate the Pork:** In a large bowl, combine gochujang, soy sauce, rice vinegar, garlic, ginger, brown sugar, and sesame oil. Add the thinly sliced pork and mix well. Let it marinate for at least 15 minutes (or up to an hour in the refrigerator).
**Cook the Noodles:** Cook the sesame noodles according to package directions. Drain and rinse with cold water to stop the cooking process. Set aside.
**Stir-Fry the Vegetables:** Heat vegetable oil in a wok or large skillet over medium-high heat. Add the sliced onion and bell pepper and stir-fry for 3-4 minutes until slightly softened. Add the julienned carrot and stir-fry for another 2 minutes.
**Cook the Pork:** Add the marinated pork to the wok with the vegetables. Stir-fry until the pork is cooked through and browned, about 5-7 minutes.
**Combine and Serve:** Divide the cooked sesame noodles among bowls. Top with the spicy gochujang pork and vegetable stir-fry. Garnish with sliced green onions and sesame seeds. Serve immediately.

For extra spice, add a pinch of red pepper flakes to the marinade.
Feel free to add other vegetables like mushrooms, zucchini, or bean sprouts.
If the sauce becomes too thick during stir-frying, add a tablespoon or two of water to thin it out.
Adjust the amount of gochujang to your spice preference.
You can use pre-cooked noodles for convenience. Just toss them with a bit of sesame oil to prevent sticking.
