Crispy, cigar-shaped pastries filled with a flavorful mixture of feta cheese and fresh dill. A popular Turkish appetizer or snack, perfect for sharing.
Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
In a bowl, combine the crumbled feta cheese, chopped dill, and black pepper. Mix well.
Lay one yufka sheet flat on a clean surface. Brush lightly with olive oil.
Cut the yufka sheet into 4 equal triangles.
Place a small amount of the feta cheese mixture (about 1 tablespoon) along the wide edge of each triangle.
Fold the two sides of the triangle inwards, then roll it up tightly from the wide edge to the tip, forming a cigar shape.
Repeat steps 3-6 with the remaining yufka sheets and cheese filling.
Place the sigara böreği seam-side down on the prepared baking sheet.
Brush the pastries with beaten egg wash to give them a golden color.
Sprinkle with sesame seeds (if using).
Bake for 15-20 minutes, or until golden brown and crispy.
Let cool slightly before serving. Enjoy!

If using filo pastry, you may need to brush each layer with melted butter or olive oil for a flakier texture.
Don't overfill the pastries, as they might burst during baking.
For a spicier version, add a pinch of red pepper flakes to the feta cheese mixture.
Serve warm as an appetizer or snack, with a side of plain yogurt or a tomato sauce for dipping (optional).
