In a medium bowl, combine soy sauce, sesame oil, rice vinegar, garlic, ginger, honey, and black pepper. Mix well.
Add the chicken cubes to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
While the chicken marinates, prepare the orange dipping sauce. In a small saucepan, combine orange juice, orange zest, rice vinegar, soy sauce, and honey. Bring to a simmer over medium heat.
Stir in the cornstarch slurry (cornstarch mixed with cold water) and cook for 1-2 minutes, or until the sauce thickens slightly. Remove from heat and let cool.
Preheat your grill to medium heat.
Thread the marinated chicken cubes onto skewers.
Grill the chicken skewers for 6-8 minutes per side, or until cooked through and slightly charred. Ensure internal temperature reaches 165°F.
Garnish with sesame seeds and chopped green onions, if desired. Serve immediately with the orange dipping sauce.
