
These empanadas are like portable pizzas, packed with all your favorite flavors in a crispy, golden crust. Customize the filling with your preferred pizza toppings!
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a medium bowl, combine mozzarella cheese, tomato sauce, red onion, bell pepper, mushrooms, black olives, and Italian seasoning. Mix well.
Lay out one empanada dough disc. Place about 2-3 tablespoons of the pizza filling in the center of the disc.
Fold the dough over to form a half-moon shape. Crimp the edges with a fork to seal the empanada.
Repeat steps 3 and 4 with the remaining dough and filling.
In a small bowl, whisk together the egg and water for the egg wash. Brush the top of each empanada with the egg wash (optional, but gives them a nice golden color).
Place the empanadas on the prepared baking sheet.
Bake for 25-30 minutes, or until the empanadas are golden brown and the filling is heated through.
