In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and brown sugar (if using).
Heat vegetable oil in a wok or large skillet over medium-high heat. Add shiitake mushrooms and stir-fry for 3-5 minutes, or until softened and slightly browned.
Add garlic and ginger to the skillet and stir-fry for 30 seconds, or until fragrant.
Add kale to the skillet and stir-fry for 2-3 minutes, or until wilted.
Add the cooked ramen noodles to the skillet. Pour the sauce over the noodles and vegetables and toss to combine.
Stir-fry for another 1-2 minutes, or until the noodles are heated through and the sauce has thickened slightly.
Remove from heat and garnish with sesame seeds and red pepper flakes (if using).
Serve immediately.
