
A comforting and fun casserole with crispy tater tots, a creamy miso sauce, and your favorite ramen toppings. A fusion of American comfort food and Japanese flavors!
Preheat oven to 400°F (200°C). Spread tater tots in a single layer on the bottom of a 9x13 inch baking dish.
In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute, stirring constantly, to create a roux.
Slowly whisk in vegetable broth and milk until smooth. Bring to a simmer, stirring constantly, until thickened.
Reduce heat to low. Whisk in miso paste, soy sauce, sesame oil, minced garlic, and grated ginger until well combined and smooth. Season with salt and pepper to taste.
Pour the miso sauce evenly over the tater tots in the baking dish. Add corn and bamboo shoots on top of the sauce.
Bake for 25-30 minutes, or until tater tots are golden brown and crispy and the sauce is bubbly.
Remove from oven and let cool for a few minutes before serving.
Garnish with toasted sesame seeds, sliced green onions, and nori seaweed strips. Top with soft boiled egg halves if desired.

Adjust the amount of miso paste to your preference. Start with less and add more to taste.

For a non-vegetarian version, you can add cooked ground pork or shredded chicken to the sauce.
