Preheat oven to 200°C (400°F).
Cut the bell peppers in half lengthwise and remove the seeds and membranes.
Place the pepper halves in a baking dish and drizzle with 1 tablespoon of olive oil. Season with salt and pepper.
Roughly chop the cooked Jersey Royals.
In a large bowl, combine the chopped Jersey Royals, crumbled feta cheese, minced garlic, chopped oregano, lemon juice, 2 tablespoons of olive oil, salt, and pepper. Mix well.
Spoon the potato and feta mixture into the bell pepper halves, dividing evenly.
Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the filling is golden brown and heated through.
Serve hot, garnished with extra fresh oregano if desired.

For a richer flavour, you can add a sprinkle of grated Parmesan cheese on top of the peppers before baking.
Feel free to substitute other herbs like thyme or rosemary for oregano.
Add a pinch of red pepper flakes to the filling for a little heat.
If Jersey Royals aren't available, use another type of small, waxy potato.
To prevent sticking, line the baking dish with parchment paper.
