A comforting and delicious baked French toast casserole featuring locally sourced Jersey apples, cinnamon, and a creamy Jersey milk-based custard. Perfect for a weekend breakfast or brunch.
Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish with 1 tablespoon of Jersey butter.
In a large bowl, combine sliced Jersey apples with 2 tablespoons of granulated sugar and 1/2 teaspoon of cinnamon. Toss to coat. Spread the apple mixture evenly in the prepared baking dish.
Sprinkle the cooked, diced Jersey Royal potatoes over the apples (if using)
Scatter the challah bread cubes evenly over the apple mixture.
In a separate large bowl, whisk together Jersey milk, eggs, 1/2 cup granulated sugar, vanilla extract, remaining 1/2 teaspoon cinnamon, nutmeg, and salt until well combined.
Pour the custard mixture evenly over the bread cubes, pressing gently to ensure the bread is soaked. Let it stand for at least 15 minutes, or up to an hour in the refrigerator, to allow the bread to absorb the custard.
Drizzle the melted tablespoon of Jersey butter evenly over the top of the casserole.
Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the custard is set. A knife inserted into the center should come out clean.
Let the casserole cool slightly before serving. Dust with powdered sugar, if desired.
