If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Prepare the chili-lime glaze: In a small bowl, whisk together the lime juice, honey, and chili sauce.
Thread the halloumi cheese and apple chunks onto the skewers, alternating between the two. About 4-5 cubes/chunks per skewer.
Brush the skewers lightly with olive oil.
Preheat your grill to medium heat.
Grill the skewers for 2-3 minutes per side, or until the halloumi is golden brown and the apples are slightly softened. Be careful not to overcook the halloumi, as it can become rubbery.
During the last minute of grilling, brush the skewers generously with the chili-lime glaze.
Remove the skewers from the grill and garnish with fresh chopped cilantro. Serve immediately.
