A hearty and flavorful skillet meal featuring German sausage, sauerkraut, apples, and onions, seasoned with caraway seeds and other complementary spices.
Slice the German sausage into 1/2-inch thick rounds.
Heat olive oil in a large skillet over medium heat.
Add the sliced sausage and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the skillet and set aside.
Add the sliced onion to the skillet and cook until softened and translucent, about 5 minutes.
Add the sliced apples to the skillet with the onions and cook for another 3-5 minutes, until slightly softened.
Stir in the sauerkraut, caraway seeds, brown sugar (if using), and Dijon mustard. Mix well to combine.
Return the browned sausage to the skillet.
Season with salt and pepper to taste.
Cover the skillet and simmer for 15-20 minutes, or until the sauerkraut is heated through and the flavors have melded together.
Serve hot, enjoy!

For a richer flavor, use bacon grease instead of olive oil to cook the sausage and onions.
If the sauerkraut is too sour for your taste, rinse it before adding it to the skillet.
Serve with mashed potatoes, spaetzle, or crusty bread for a complete meal.
