
Delicious and flavorful chicken skewers marinated in a fragrant garlic and herb mixture, grilled to perfection and served with a medley of colorful grilled vegetables. A healthy and satisfying Italian-inspired meal.
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
In a large bowl, whisk together the olive oil, minced garlic, rosemary, thyme, oregano, lemon juice, salt, and pepper.
Add the chicken cubes to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours.
While the chicken marinates, prepare the vegetables. Toss the bell peppers, red onion, zucchini, and cherry tomatoes with a tablespoon of olive oil, salt and pepper.
Preheat your grill to medium-high heat.
Thread the marinated chicken onto the skewers. Alternate with vegetables if desired.
Grill the chicken skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred. Internal temperature of chicken should reach 165°F (74°C).
Remove the skewers from the grill and let them rest for a few minutes.
Serve the chicken skewers immediately. Drizzle with balsamic glaze, if desired.
