Preheat oven to 375°F (190°C).
Brush baguette slices with olive oil and arrange on a baking sheet. Toast in the preheated oven for 8-10 minutes, or until lightly golden brown. Set aside to cool slightly.
While baguette slices are toasting, prepare the French onion jam. In a large skillet over medium heat, melt butter. Add sliced onions and cook, stirring occasionally, until softened and caramelized, about 20-25 minutes. Reduce heat if onions start to brown too quickly.
Stir in brown sugar, balsamic vinegar, red wine (if using), salt, and pepper. Simmer for another 5 minutes, or until the liquid has reduced and the jam has thickened slightly.
Top each toasted baguette slice with a generous spoonful of French onion jam. Then, top with a slice of brie cheese.
Return the crostini to the baking sheet and bake in the oven for 3-5 minutes, or until the brie cheese is softened and slightly melted.
Garnish with fresh thyme leaves and serve immediately.
