In a large bowl, mash the thawed edamame with a fork or potato masher until mostly smooth, leaving some chunks for texture.
Add the cooked and drained ramen noodles, chopped green onion, grated ginger, minced garlic, soy sauce, sesame oil, cornstarch, salt, and pepper to the bowl.
Mix all ingredients thoroughly until well combined.
Shape the mixture into patties, about 1/2 inch thick. You should get about 4 patties.
**To Pan-Fry:** Heat the vegetable oil in a frying pan over medium heat. Fry the patties for about 5-7 minutes per side, or until golden brown and heated through.
**To Bake:** Preheat oven to 375°F (190°C). Lightly grease a baking sheet with olive oil spray. Place the patties on the baking sheet and bake for 10-12 minutes per side, or until golden brown.
Serve the edamame and ramen noodle patties warm. Garnish with extra green onion or sesame seeds, if desired.
