Flaky salmon fillets glazed with a savory-sweet miso marinade, served alongside crisp-tender sesame green beans.
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a small bowl, whisk together miso paste, mirin, soy sauce, brown sugar, minced garlic, and grated ginger to create the miso glaze.
Place salmon fillets on the prepared baking sheet. Brush the miso glaze evenly over the top of each fillet.
Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
While the salmon is baking, prepare the green beans. Bring a pot of salted water to a boil.
Add the green beans to the boiling water and cook for 3-4 minutes, or until they are bright green and crisp-tender. Drain well.
In the same saucepan, heat the sesame oil over medium heat. Add the drained green beans and toss to coat.
Stir in sesame seeds and rice vinegar. Season with salt and pepper to taste.
Serve the miso glazed salmon immediately with the sesame green beans.

For extra flavor, broil the salmon for the last 1-2 minutes of cooking time to caramelize the glaze.
Serve with steamed rice or quinoa for a complete meal.
Adjust the amount of brown sugar in the glaze to your liking, depending on how sweet you prefer your salmon.
If you don't have mirin, you can substitute with dry sherry or sweet white wine.
