In a large pot or Dutch oven, combine the apple cider, star anise, cinnamon sticks, orange peel, and cloves.
Bring the mixture to a simmer over medium heat.
Reduce the heat to low, cover, and simmer for at least 30 minutes, or up to 1 hour, to allow the flavors to meld. The longer it simmers, the more intense the flavor will be.
Taste the cider and add brown sugar, if desired, adjusting to your preferred level of sweetness. Stir until the sugar is dissolved.
Remove the star anise, cinnamon sticks, orange peel, and cloves before serving. You can use a slotted spoon or strain the cider through a fine-mesh sieve.
